Variety: 100% Sauvignon Blanc

Appellation: AOP Touraine, France – Touraine–Chenonceaux

Vineyards: Bourré, Choussy and Oisly

Soil: Three soil types - Tuffeau limestone formed 100 million years ago, mixed with a harmonious blend of loose and flinty clay, mica and sand. Silex, the 65-million-year-old flint terroir, stores and reflects heat, producing restrained linear, gunflint mineral wines with acidity and spice. Sandy topsoil sitting on top of a thick layer of excellent smectite clay adding varietal flavours and aromas.

Winemaking: Following cold stabilisation in stainless steel, this vintage underwent a finely tuned aromatic fermentation over the course of approximately one month, to realise the wine’s full aromatic potential, before alcoholic fermentation over ten days.

Technical: Alc./Vol. 12.29% | Residual sugar 1.5 g/L | Free/Total Sulphur levels 25/90 mg/L | Bottled April 2018 | Production 9,000 bottles

Notes: Racy and crisp sauvignon showing layered citrus, notes mango and lotus with green tea, hedgerow and wild mint and artichoke. The palate shows textured flinty minerality and length, finished with crisp, refreshing acidity and lovely saline notes.
