The variations of soil that we have in our vineyards are of major importance in attaining the wine profiles we seek to achieve. In our Bourré vineyards, the grapes profit from the flinty clay over thick limestone (tuffeaux) mix. The tuffeau rocks are composed of fossilized marine animals containing traces of mica and sand. The grapes from Bourré-Vallée du Cher soil greatly aid in the building of body and texture (minerality) in the wine. Our soils in Choussy/Oisly give our wine the fruit flavours, aromas and Sauvignon Blanc bouquet we aim to achieve.
Viticulture
Sauvignon Blanc has a high, racy acidity level in the grape, Levin utlises the manual leaf plucking technique in order to ensure more direct sun exposure on the grapes, allowing them to fully ripen on the vine.
When harvested, the increased sugar and flavour content of the grape balances with its naturally high acidity to create a harmonious blend.
Climate
The climate of the region is important for the growth of quality vines and grapes. The mild, semi-continental temperature helps produce the sweetness or tartness of the grape in a particular season.
The Loire Valley is a balanced mix of conditions. While there have been periods of inclement weather, the region is known for its lack of extreme temperature.
